Hearty Vegetable Soup

2 pounds lean stewing beef -- cut into 1" cubes
2 large potatoes -- diced
2 medium onions -- chopped
2 carrots -- peeled, sliced
2 celery stalks -- sliced
1 tablespoon dried parsley flakes
1 teaspoon salt
1/2 teaspoon thyme
1/4 teaspoon freshly-ground black pepper
1 can whole tomatoes - (16 oz)
2 cups water


Combine all ingredients in slow cooker. Cover and cook on: (Low) for 10 hours or (High) 5 hours.

Makes 6 to 8 servings.
