Italian Roast Beef
4 pounds beef rump roast
2 cloves garlic
1 large stalk celery
2 ounces salt pork or bacon
Trim all excess fat from roast. Mince 1 onion, the garlic, celery and salt pork. Lightly flour roast; rub with minced mixture. Slice remaining onion place in slow cooker. Place roast on onion. Cover and cook on low setting for 10 to 12 hours.
