Honey Wheat Granola

1 c Rolled wheat
1/4 c Vegetable oil
1 ts Vanilla
3 c Rolled oats
1/4 ts Salt
1/2 c Wheat germ
1/4 c Chopped dried apricots or dates
1/2 c Honey
1/2 c Hulled sunflower seeds

Combine all ingredients except the dried fruit in the slow cooker. Cook on low with lid slightly ajar for about 4 hours, stirring occasionally. Cool, add dried fruit, and store in an airtight jar. Use within 2 weeks.
