Roast Potatoes and Carrots

2 to 3 lbs of beef roast
1 medium onion, peeled and sliced
4 or 5 carrots, peeled and cut into 1/4ths
4 or 5 potatoes, peeled and cut into 1/4ths
1 pkg onion soup mix
water

Put roast in slow cooker, place vegetables around and on top of roast. Sprinkle onion soup mix over top, then add water almost to the top of the slow cooker. Cook on low at least 8 hours. When done remove meat and vegetables and place in bowl. To make gravy, pour broth from slow cooker into pot on stove, bring to boil. Mix 2 Tbsp cornstarch with 1/2 cup cold water, add to broth, bring back to boil and stir constantly until thick. If not thick enough continue to add more of the cornstarch mixture until desired thickness is reached.
