Beef and Bulgur

1 1/2 pounds good quality beef steak or roast - (to 2 lbs)
1 cup chopped onions
2 carrots -- sliced thinly
1 cup beef broth -- from base or canned
1/4 cup red wine
1 cup bulgur
Salt -- to taste
Freshly-ground black pepper -- to taste


Layer vegetables in slow cooker; trim beef of all visible fat and cut in strips about 3/4-inch thick and add to the pot. Pour broth and wine over all and cook on LOW 6 to 8 hours.

Add bulgur and cook on HIGH until bulgur is tender, adding a little more broth or water if necessary.
