Beef Pot Roast

4 pounds chuck roast - (to 5 lbs)
1 clove garlic clove
Salt to -- taste
Freshly-ground black pepper -- to taste
1 carrot -- chopped
1 celery stalk -- chopped
1 small onion -- sliced
3/4 cups sour cream mixed with 3 tablespoons flour and 1/2 cup dry white wine

Rub roast with garlic and season with salt and pepper. Place in the slow cooker and add remaining ingredients. Cover and cook on LOW 10 to 12 hours.

Serve over noodles.
