Fiesta Rice and Sausage
1 tsp. vegetable oil
2 lbs. spicy Italian sausage, casing removed
2 cloves garlic, minced
2 tsp. ground cumin
4 onions, chopped
4 green peppers, chopped
3 jalapeno peppers, seeded & minced
4 cups beef broth
2 pkgs. Long-grain & rice mix (6-1/4 oz. each)
Wear rubber gloves when handling jalapenos & do not touch eyes.
Heat oil in large skillet; add sausage. Break up sausage with back of spoon while cooking; cook until browned, about 5 minutes. Add garlic & cumin; cook 30 seconds. Add onions, bell peppers & jalapeno peppers. Sauté mixture until onions are tender, about 10 minutes. Pour mixture into slow cooker. Stir in beef broth & rice.
Cover & cook on HIGH for 1 to 2 hours or cook on LOW 4 to 6 hours.
Makes 10 to 12 servings
