1 2 lb boneless beef roast (your choice)
2 large green bell peppers, chopped
2 large red bell peppers, chopped
3 small onions, peeled & chopped
1 can Hunts Italian chunky tomato sauce
Italian mixed herbs to taste
garlic powder to taste
salt to taste
pepper to taste
3 tab balsamic vinegar
Roughly chop the peppers & onions and put into the bottom of a 5 qt slow cooker.
Lay roast on top and cover with the tomato sauce, seasonings & vinegar. Cook on low 8-10 hours. Shred beef & serve on crusty bread with the peppers and onions & melted Mozzarella/Parmesan cheese. White bread made in the bread machine with 2 teas Italian herbs and 3 oz grated Parmesan cheese (1 1/2 lb loaf) is good with this. It would also be good served over pasta or rice.
