Ham-Bean Soup

1 ham bone with a small amount of ham still on it
2 cups Navy beans or mixed beans
8 cups water (3 cups more may be added after bone is taken out, then cook some more)
1 garlic clove -- minced (or 1/2 tspn garlic powder)
1 tablespoon lemon juice
1 tablespoon honey
1 bay leaf
1 large onion -- chopped
Salt -- to taste
Freshly-ground black pepper -- to taste

Wash beans. Put everything in slow cooker along with a ham bone (that has a small amount of ham still on). Start cooking at HIGH and after it starts cooking, turn to simmer. Cook all night and until serving time at noon or even later. Remove the bone in the early morning and add more water. Remove bay leaf before serving.
