Pork Chop and Cranberry Stuffing

4 medium potatoes - (to 6) -- peeled, sliced thick
4 boneless pork chops - (to 6)
1 package stuffing mix with cranberries - (6 oz)
1 cup hot water
1 tablespoon soft butter
Salt -- to taste
Freshly-ground black pepper -- to taste


Place potatoes in a 3 1/2-quart or larger slow cooker; sprinkle lightly with salt and pepper. Top with pork chops; sprinkle lightly with salt and pepper. Combine stuffing mix with 1 cup hot water and 1 tablespoon softened butter. Spoon over the pork chops. Cover and cook on LOW for 7 to 9 hours.
