1 1/2 lb To 2-lb. beef round steak
2 tb Cooking oil
1/4 c Soy sauce
1 c Onion; chopped
1 cl Garlic; minced
1 ts Sugar
1/2 ts Salt
1/4 ts Pepper
1/4 ts Ground ginger
4 Tomatoes; cut into eighths OR 1 cn 16-oz. tomatoes with liquid; cut up
2 lg Green peppers; cut into strips
1/2 c Cold water
1 tb Cornstarch
Cut beef into 3"x1" strips; brown in oil in a skillet. Transfer to a slow cooker. Combine soy sauce, onion, garlic, sugar, salt, pepper, and ginger; pour over beef. Cover and cook on low for 5 to 6 hrs. or until meat is tender. Add tomatoes and green peppers; cook on low for 1 hr. longer. Combine the cold water and cornstarch to make a paste; stir into liquid in slow cooker and cook on high until thickened. Serve over noodles or rice. Yield - 6 to 8 servings.
