Beef Fajitas

1 1/2 lb Beef flank steak
1 Onion; sliced
1 Green pepper; cut in strips
1 Red pepper; cut in strips
1 Jalapeno pepper; chopped
1 tb Cilantro
2 cl Garlic; minced
1 ts Chili powder
1 ts Ground cumin
1 ts Ground coriander
1/4 ts Salt
1 cn 8-oz. chopped tomatoes
12 8" flour tortillas


Sour cream
Cheddar cheese; shredded

Cut flank steak into 6 portions. In any size slow cooker, combine meat, onion, green and red peppers, jalapeno pepper, cilantro, garlic, chili powder, cumin, coriander, and salt. Add tomatoes. Cover and cook on low for 8-10 hrs. or on high 4-5 hrs. Remove meat from slow cooker and shred. Return meat to slow cooker and stir. To serve - spread meat mixture into flour tortillas, add favorite toppings. Roll up fajitas. Serves 6 to 8.
