Ginger Pot Roast
1 lb Boneless beef pot roast (up to 2)
2 tb Oil
4 Cloves garlic; pressed
2 ts Grated fresh ginger root
Salt; to taste
1 c Water (up to 1-1/2)
3 tb Soy sauce
3/4 c Raw rice
1/4 ts Salt
Brown beef in oil then rub with mixture of garlic and ginger. Salt
lightly. Transfer to slow cooker. Pour in water and soy sauce. Cover
and cook on Low for 7-8 hours or on High for 2-3 hours and then on
Low for 2 hours more. Remove 1 1/2 cups broth from pot. Place in
saucepan with rice and salt. Bring to a boil. Reduce heat. Cook until
rice isil done, 18-20 minutes.
