Meatless Spaghetti Sauce
1 lb Eggplant; peeled, 1 inch cubes
1 md Onion; chopped
2 Garlic cloves; minced
1 ts Dried parsley
14 1/2 oz Del Monte stewed tomatoes; Italian style
6 oz Tomato paste
4 oz Mushroom pieces; undrained
1 ts Dried oregano
1 1/2 ts Morton Lite Salt
1 ts Sugar
1 ts Italian seasoning; or to taste
Combine all ingredients in a slow cooker. Stir well. Cover & cook on
High 2 - 4 hours (Low for 10 -12 hours).
Makes about 6 cups. Serve over your choice of pasta.
