Moist Tender Duck

2 Wild ducks
1 Apple
1 Potato
Salt to taste
Pepper to taste
4 Ribs celery -or- 4 Carrots
1 cn (10.75-oz) beef consomme plus 6 oz Water -or- 2 c Beef bouillon


To prepare ducks for baking in slow cooker, wash ducks and pat dry. Quarter apple and potato. Stuff each duck with apple and potato. Sprinkle ducks with salt and pepper. Place celery or carrots in bottom of slow cooker. Lay ducks on top. Pour bouillon over ducks and cover. Cook ducks on high heat for 4 to 4-1/2 hours. Test breasts for doneness. Remove ducks and cover with your favorite sauce.
